Raspberry Chipotle Salmon

This is a dish I made for a contest my school was holding. We had to use a Raspberry Chipotle sauce from Fischer and Weiser. I made Top 10 finalists with this dish! I served it with asparagus and mashed potatoes and I'll give the recipe/ingredients for that too.


Raspberry Chipotle Glazed Grilled Salmon




Ingredients:
  • Salmon filets (however many you require)
  • a bundle of asparagus (or two)
  • potatoes (for mashing)
  • Fischer and Weiser Raspberry Chipotle sauce
  • 3 cloves garlic-chopped or g
  • lemon-zested and juiced
  • 1 C any kind of fruity wine (I used Arbor Mist Mango and Strawberry)
  • 3 TBSP butter (plus more for your potatoes)
  • green onions or chives
  • cream or milk 
  • 2 TBSP vegetable oil
  • salt and pepper to taste
Directions: (These steps aren't necessarily in order. You'll want to reorder them because you don't want one side being colder than the rest. Time management and all.)
  1. Starting with the potatoes you're going to want to peel them and wash them. Cut them up and prep them for The Mashening. Actually just The Boiling part of the Mashening. Like a prequel to The Mashening is The Boiling. Anyways, back to topic, you'll want to bring your water and your cup of wine  to a boil with your potatoes. (All the alcohol boils out and you'll get a nice fruity note to your potatoes with a lovely scent through your house.)
  2. When the potatoes are softened up, drain the water and add cream/milk (sour cream works really well too or even cream cheese if it's at room temp or softened), butter, green onion or chives, zest and juice from the lemon, garlic, salt, and pepper. MASH!! 
  3. Moving to the salmon, heat your grill to 500 degrees. Have your salmon brushed with oil salt and pepper. Lay skin side down and brush with Fischer and Weiser Raspberry Chipotle sauce. Grill for 6-8 minutes for medium doneness and turning ONCE after 5 or 6 minutes. Remove from grill and let rest? Idk... does salmon have to rest? I rested mine so yeah.
  4. Melt your 3 TBSP of butter in a saute pan and add garlic and asparagus. Saute with salt and pepper covered for about 10 minutes. Stirring occasionally. If you want it hella wella done reduce heat and cook an additional 10 minutes. 
  5. Plate it all together to make it look pretty! (Nah you don't have too but I did. 

I know this whole recipe sounds outrageous but trust me I put a LOT of thought and preparation into this before even THINKING about submitting anything. Raspberry pairs great with lemon (see: the potatoes). And who doesn't love some good sauteed asparagus? I hope if ya'll try this you like it because I loved it.

Stuffed Mushrooms

I was never a huge mushroom fan until I was tricked into eating them by the older sister of a friend. Needless to say I don't quite trust her when it comes to food anymore. Regardless, I made these sometime last year and shared them with my neighbor because she's the only person near me that eats mushrooms and she enjoyed them WAY more than I did, although I did think they were pretty damn good. Just so you're aware before you get into this and then you're like "Wait...whaaaa-?" This is NOT  your momma's banana pudding recipe. Unless it is. All I know for sure about momma's and banana pudding is that this ISN'T my momma's recipe but she DOES love it.  Banana Pudding Ingredients: milk (good ol' certified cow calcium) (1) 3.4 oz box Banana Pudding mix (Instant or heat and serve. I used heat and serve without reading the box and needless to say it took me two tries to get it right. I also grabbed Banana CREAM pudding instead of regular banana... I don't pay a lot of attention to things. Anyways, all are great options. You can even make your own pudding if you'd care to.) Nilla Wafers (please please please please grab the Name Brand Nilla wafers and not the Walmart Great Value brand. Nothing against Great Value or any off brand labels but NIlla Wafers are not the same as "Vanilla Flavored Wafer Cookies")
