Peanut Butter Cookies

These are an all-time favorite of mine! This is actually my mothers recipe that she's been using for at least 25 years. I'm excited for this!


Peanut Butter Cookies


Ingredients:
  • 3/4 C of store brand peanut butter (If you prefer to use Jif by all means go ahead. My mother and I, however, both agree that Jif, or any name brand peanut butter such as Peter Pan, all have a lot of oil and it makes for an oily cookie once you add your butter. Speaking of butter...)
  • 1/2 C of butter (1 stick), at room temp.
  • 1 1/4 C firmly packed light brown sugar (When I say firmly packed, I mean it should hold shape well after you've beat the measuring cup to get it out)
  • 3 tbsp milk
  • 1 tbsp vanilla
  • 1 egg
  • 1 3/4 C all-purpose flour
  • 3/4 tsp salt
  • 3/4 tsp baking soda
Directions:
  1. Heat oven to 375 degrees. 
  2. Mix your peanut butter, butter, brown sugar, milk, and vanilla. Beat on medium. 
  3. Add egg. Beat until barely blended. 
  4. Combine your flour, salt and baking soda in a separate bowl. (Here's a quick baking tip, ALWAYS mix your wet ingredients separate from your flour, salt and baking soda/powder)
  5. Combine your flour mixture to your sugar and peanut butter mixture- SLOWLY. 
  6. Again, mix until barely blended. 
  7. Drop them by spoonful's (or roll them into small balls) and place on a LIGHTLY greased baking sheet.
  8. Flatten them slightly with a fork creating a cross-hatched design on the top. 
  9. Sprinkle with sugar if you'd like.
  10. Bake at 375 degrees for 7-8 minutes. 


Seriously guys. I can't wait for y'all to try these! I know everyone has had a peanut butter cookie and everyone has their own peanut butter cookie recipe but THIS is THE peanut butter cookie recipe. 'Nuff said.

Stuffed Mushrooms

I was never a huge mushroom fan until I was tricked into eating them by the older sister of a friend. Needless to say I don't quite trust her when it comes to food anymore. Regardless, I made these sometime last year and shared them with my neighbor because she's the only person near me that eats mushrooms and she enjoyed them WAY more than I did, although I did think they were pretty damn good. Banana Pudding

Just so you're aware before you get into this and then you're like "Wait...whaaaa-?" This is NOT  your momma's banana pudding recipe. Unless it is. All I know for sure about momma's and banana pudding is that this ISN'T my momma's recipe but she DOES love it.  Banana Pudding Ingredients: milk (good ol' certified cow calcium) (1) 3.4 oz box Banana Pudding mix (Instant or heat and serve. I used heat and serve without reading the box and needless to say it took me two tries to get it right. I also grabbed Banana CREAM pudding instead of regular banana... I don't pay a lot of attention to things. Anyways, all are great options. You can even make your own pudding if you'd care to.) Nilla Wafers (please please please please grab the Name Brand Nilla wafers and not the Walmart Great Value brand. Nothing against Great Value or any off brand labels but NIlla Wafers are not the same as "Vanilla Flavored Wafer Cookies")
