Rolled Chicken Tacos


Okay, before I even begin on this one I want to start with the disclaimer that I am NOT 100% Hispanic. I'm probably more like 12%. That being said I won't be providing an authentic flauta recipe this time around. Maybe in the near future I'll expand and go for authentic but as for now this is Tex-Mex. I would like to take this time to confirm that although I am not as Hispanic as some of us would like, I AM 100% Texan so there's that. Now, enough about my Ancestry.com and let's get to this!


Rolled Chicken Tacos


Ingredients:
  • 1 1/2 C shredded chicken
  • 6-8 oz Cream Cheese (I have used the whole 8 oz and it seems to be almost too much when you add the shredded cheese. Which brings us to our next bullet...)
  • Mexican Blend Shredded Cheese
  • 1 can of Chopped Green Chiles
  • Yellow, Green, and Red Bell peppers (not necessarily the WHOLE peppers but just enough for color and taste...but mostly color.)
  • Onion (maybe equal amount of onion to peppers.)
  • Taco seasoning
  • Corn or Flour tortillas (homemade or store bought. I used store bought flour.)
Directions:
  1. Saute your onions, green chiles, and peppers together. 
  2. When your veggies are soft add your shredded chicken and cream cheese. 
  3. Once your cream cheese it melted and your chicken and vegetables have been mixed together thoroughly add your taco seasoning. 
  4. Take your cheesy chicken veggie mix and add it to your tortillas along with the shredded cheese.
  5. Roll them tightly!!
  6. This next step can be done one of two ways. You can either bake these for 10-12 minutes (or until golden brown) at 400 degrees or fry them in a small pan of oil at 325 degrees for about 5 minutes per side. (I chose this method. I know, I know. I'm terrible. But they don't call me PhatChef for nothing.)
  7. Once they're all baked/fried and perfectly golden brown  you can dress them up however you want! I've used salsa, shredded lettuce, guacamole, pico de gallo, jalapanos, sour cream, queso, Cotija Cheese.... the possibilities are ENDLESS!!

Basic Pancakes

This is the most basic and simple pancake recipe and the pancakes come out so thick and fluffy it's ridiculous. Once I started making pancakes from scratch I never got them from a box or a Bisquick Shake & Make. No offense but honestly...where's the comparison here? Stuffed Mushrooms

I was never a huge mushroom fan until I was tricked into eating them by the older sister of a friend. Needless to say I don't quite trust her when it comes to food anymore. Regardless, I made these sometime last year and shared them with my neighbor because she's the only person near me that eats mushrooms and she enjoyed them WAY more than I did, although I did think they were pretty damn good.
