Crab Rangoons

Here's a little something different for y'all. I'm going to start by saying I LOVE Chinese food. Well, American Chinese food anyways. I've never had the real stuff. REGARDLESS, Crab Rangoon's are my absolute favorite thing so, in typical Phat Chef fashion, I set out to make my own because... Why buy what you can make yourself? (Even if they're not as pretty)


Crab Rangoon


Ingredients:
  • 1/2 lb imitation crab meat or lump crab meat
  • 3 stalks of scallions, very finely chopped
  • 1 tsp Soy Sauce
  • 1 tsp Worcestershire sauce... (Worchestershire? Warcesterchire??)
  • 1 tsp Sugar
  • 1 pkg Wonton wrappers (or you can make your own. They're reeaallyy easy)
  • 1 pkg (8 oz) Cream Cheese
  • 1 water ( I know there's no measurement there so just fill a condiment cup and set aside. It's not an actual ingredient. )
Directions:
  1. Separate your imitation crab meat into weird fine threads. (Kind of makes you uncomfortable once you realize it's an odd stringy fiber thing, doesn't it? Not to late to use the real stuff.) In a mixing bowl, combine your crab strings with you're cream cheese, Worcester sauce, soy sauce, sugar, and scallions. You're basically just throwing it all into a bowl and mixing it into a lumpy paste.
  2. Fill your wrappers by the spoonfuls'. 
  3. Wet all your edges with the water you've set aside in your condiment cup. Fold it in half, corner to diagonal corner, to create a triangle. (For those of us who aren't exactly proficient in wrapping wontons I have provided a link to a video on how to wrap a wonton 5 different ways via Pailin's Kitchen YouTube channel.)
  4. Seal all your edges. (TIGHTLY. You don't want your filling pouring out once it gets hot. Yes, I've made that mistake as well. Learn from me. I will be your guiding light.)
  5. With your burner on medium, deep fry your wontons for about 1 to 2 minutes or until they're golden brown and crispy. 
  6. Drain the excess oil on a paper towel and enjoy with whatever sauce you prefer or just have them straight up. 
There we have it folks! This is just the basic crab rangoon recipe that you can get at your local China Buffet (because let's face it... they're all called China Buffet), but you can feel free to make them into just about anything else, including, but not limited to:
  • jalapeno popper wontons with jalapeno, bacon, cream cheese, and cheddar
  • spinach and artichoke with mozzarella and cream cheese
  • or...dare I say even make a desert out of them! (Side Note: I've done the desert one. Just freeze some left over cheesecake and cut into squares. Put the squares in the wrapper. Fry them and dust them with powdered sugar. Honestly. They're amazing.)

Stuffed Mushrooms

I was never a huge mushroom fan until I was tricked into eating them by the older sister of a friend. Needless to say I don't quite trust her when it comes to food anymore. Regardless, I made these sometime last year and shared them with my neighbor because she's the only person near me that eats mushrooms and she enjoyed them WAY more than I did, although I did think they were pretty damn good. So here we go... Stuffed Mushrooms Ingredients: 4 portobello mushrooms, or 12 large white mushrooms 1 small red bell pepper 1/4 medium onion, minced (not 1/4 C but 1/4 of the whole onion) 2 green onions, minced 1 garlic clove, minced 2 bacon strips, diced 1 oz cream cheese 2 TBSP bread crumbs 2 TBSP shredded mozzarella garlic and onion powder, to taste salt and pepper to taste Directions: Preheat oven to 400 F Clean mushrooms and separate caps from stems. Banana Pudding

Just so you're aware before you get into this and then you're like "Wait...whaaaa-?" This is NOT  your momma's banana pudding recipe. Unless it is. All I know for sure about momma's and banana pudding is that this ISN'T my momma's recipe but she DOES love it.  Banana Pudding Ingredients: milk (good ol' certified cow calcium) (1) 3.4 oz box Banana Pudding mix (Instant or heat and serve. I used heat and serve without reading the box and needless to say it took me two tries to get it right. I also grabbed Banana CREAM pudding instead of regular banana... I don't pay a lot of attention to things. Anyways, all are great options. You can even make your own pudding if you'd care to.) Nilla Wafers (please please please please grab the Name Brand Nilla wafers and not the Walmart Great Value brand. Nothing against Great Value or any off brand labels but NIlla Wafers are not the same as "Vanilla Flavored Wafer Cookies")
