Garlic Knots

I LOVE making bread. Any and all kinds of breads. I started making breads the artisan way before using a stand mixer because A: I didn't have stand mixer and 2: I just wanted to be able to say that I can make bread from scratch by hand. So without further adieu...


Garlic Knots


Ingredients:
  • garlic- about like maybe 3 cloves...? (vampire repellent)
  • parsley (amateur chefs go to garnish)
  • 1 1/2 tsp garlic salt (or just garlic powder and salt)
  • 1 1/2 tsp sugar
  • 1 stick of butter
  • 1 1/2 C water (warm or hot. As long as it's not cold. The heat helps the yeast to activate)
  • 1 pkg yeast 
  • 3 3/4 C bread flour
  • 2 tsp salt
  • 2 2/3 tbsp Olive Oil
  • 1/4 C grated Parmesan cheese
Directions:
  1. Add flour, sugar, yeast, and salt. Mix. Add warm water and 2 tbsp of olive oil. Beat until dough forms ball. Kneed.
  2. Grease a large bowl with remaining olive oil. Place dough in bowl and cover. Let rise for 90 min or until doubled. (Or however long. Technically it is possibly to over proof your breads but IMO it just makes them super fluffy.)
  3.  Once dough has risen, divide it in half and let it rest an additional 10 minutes. From here take small pieces from dough to form balls. Make balls into rope. Make rope into knots. (Like an actual knot. Don't overthink it. You can ACTUALLY tie it in a knot like a shoe lace.) Let knots rest for 30 minutes.
  4. Bake at 450 degrees for 20 minutes or until golden brown. Cool for 5 minutes and then brush with garlic butter and sprinkle with cheese. 
                                 For Garlic Butter
-Melt butter over medium heat. Add garlic and simmer. (Don't burn the butter) Add parsley and garlic salt.

*Additional Notes*
-If dough is too dry add very small amounts of water at a time.
-If dough is too wet add very small amounts of flour at a time.


My mother LOVES these my boyfriend requests these with almost anything we're having for dinner, his daughter thinks they're great. They're a seriously DELICIOUS little knot of bread and bad breath. Just... amazing.

Stuffed Mushrooms

I was never a huge mushroom fan until I was tricked into eating them by the older sister of a friend. Needless to say I don't quite trust her when it comes to food anymore. Regardless, I made these sometime last year and shared them with my neighbor because she's the only person near me that eats mushrooms and she enjoyed them WAY more than I did, although I did think they were pretty damn good. Chicken Tagine

:In the previous post I mentioned making this a traveling food blog and this is another recipe that backs up the fact that I should probably do that. Tagine, or tajine, is a North African dish. It's namesake is the pot in which it's cooked in. However, if that were the entire truth in this case it would be called like "Dutch Oven Chicken Legs" and that doesn't sound nearly as cool.
