Jerk Chicken

And today we will be traveling to Jamaica! I feel like that's what this should be, a traveling food blog. Except I don't travel, I just make food from everywhere. Anyways, I made this with red beans and rice with sausage and I bought a Fischer and Wieser pineapple habanero sauce from H.E.B (local Texas grocery store).

Jerk Chicken with Red Beans & Rice


Ingredients:
  • 2tsp coriander seeds
  • 2tsp onion powder
  • 2tsp garlic powder
  • 2tsp allspice berries
  • 2tsp ground ginger
  • 2tsp dried thyme
  • 2tsp black peppercorns
  • 2tsp ground cinnamon
  • 2tsp granulated white sugar
  • 1tsp nutmeg
  • 1 Clove, whole
  • 1 tsp habanero chili powder or cayenne 
  • 1/2 lime, juiced
  • 1/4 C oil
  • 4 leg quarters
  • salt, as needed to taste
  • Zatarans: Red Beans and Rice with Sausage
  • Fischer and Wieser: Roasted Pineapple Habanero Sauce
Directions:
  1. Combine all spiced and grind in a coffee grinder. If you don't have one a mortar and pestle, a food processor, or even a Ziploc baggie and a rolling pin will suffice. 
  2. Place in a large bowl, add oil and lime juice. Mix to combine. Taste and adjust to preference. 
  3. Add chicken to bowl of spice mix and coat thoroughly.
  4. Marinate covered for a MINIMUM of 1 hour and a MAXIMUM of 12 hours. 
  5. Remove chicken from marinade.
  6. (If you have access to an outdoor grill, follow step 6. If you do not proceed to steps 7 and 8) Grill chicken to an internal temperature of 165 degree's F.
  7. Preheat oven to 350 degree's F
  8. Heat grill pan, coat lightly with oil and begin the grilling process. Transfer to a sheet tray and finish the cooking process in the oven until the internal temperature reached 165 degrees F.
  9. While your chicken is cooking prepare the rice to the box directions. 
  10. Plate and serve with Fischer and Wieser Pineapple Habanero Sauce
Holy flavor profile, Batman! This one is BANANAS! Everything about it is amazing. I love it! The Pineapple Hanabero sauce is just ONE of the Fischer and Wieser sauces that I have used and I love them all! Stuffed Mushrooms

I was never a huge mushroom fan until I was tricked into eating them by the older sister of a friend. Needless to say I don't quite trust her when it comes to food anymore. Regardless, I made these sometime last year and shared them with my neighbor because she's the only person near me that eats mushrooms and she enjoyed them WAY more than I did, although I did think they were pretty damn good. Banana Pudding

Just so you're aware before you get into this and then you're like "Wait...whaaaa-?" This is NOT  your momma's banana pudding recipe. Unless it is. All I know for sure about momma's and banana pudding is that this ISN'T my momma's recipe but she DOES love it.  Banana Pudding Ingredients: milk (good ol' certified cow calcium) (1) 3.4 oz box Banana Pudding mix (Instant or heat and serve. I used heat and serve without reading the box and needless to say it took me two tries to get it right. I also grabbed Banana CREAM pudding instead of regular banana... I don't pay a lot of attention to things. Anyways, all are great options. You can even make your own pudding if you'd care to.) Nilla Wafers (please please please please grab the Name Brand Nilla wafers and not the Walmart Great Value brand. Nothing against Great Value or any off brand labels but NIlla Wafers are not the same as "Vanilla Flavored Wafer Cookies")
