Spiced Apple Chutney

I'm going to start this off by being as honest as I can. I don't know the difference between a Spiced Apple Chutney or a Spiced Apple Jam. I'm a fraud. There you go. Now you know. Now, in keeping with the air of honesty, I think the difference is just that a chutney is spiced and has a more course texture while jams are...well...jams. I went to culinary school online, what do you want from me? What do you really expect? Lol Anyways, I've made this a LOT for my boyfriend because he's a HUGE fan or pork and what goes better with pork than apples. He pretty much has come to expect it when we have pork chops for dinner.

Spiced Apple Chutney


Ingredients:
  • 2-3 large Granny Smith Apples, peeled and diced
  • 3-5 strips of bacon
  • 1/4 C diced onion
  • 1 C brown sugar
  • 2 tsp cinnamon
  • 1 tsp lemon juice
  • 1/4 tsp cayenne pepper
  • salt and pepper to taste
Directions:
  1. Dice bacon and brown in a pan
  2. Don't strain it, add onion to bacon and sweat down.
  3. Add apples, brown sugar, cinnamon, salt, lemon juice, and cayenne.
  4. Cook until apples soften. Smash them down with a fork or something just so that it's not AS chunky as it would be otherwise. 
  5. Once apples are softened, bacon is cooked, and the sauce is a kind of glaze. Remove from heat and serve. 
  6. If the glaze seems too thick you can thin it out with Apple Cider Vinegar, Lemon Juice, or water. 
There ya go! This one is super easy and hella good. What's not to love about literally anything with bacon? I've used it to stuff pork chops or even to garnish with. Variations include mango instead of apples, you can add raisins, and of course omit any ingredients listed.

Stuffed Mushrooms

I was never a huge mushroom fan until I was tricked into eating them by the older sister of a friend. Needless to say I don't quite trust her when it comes to food anymore. Regardless, I made these sometime last year and shared them with my neighbor because she's the only person near me that eats mushrooms and she enjoyed them WAY more than I did, although I did think they were pretty damn good. Banana Pudding

Just so you're aware before you get into this and then you're like "Wait...whaaaa-?" This is NOT  your momma's banana pudding recipe. Unless it is. All I know for sure about momma's and banana pudding is that this ISN'T my momma's recipe but she DOES love it.  Banana Pudding Ingredients: milk (good ol' certified cow calcium) (1) 3.4 oz box Banana Pudding mix (Instant or heat and serve. I used heat and serve without reading the box and needless to say it took me two tries to get it right. I also grabbed Banana CREAM pudding instead of regular banana... I don't pay a lot of attention to things. Anyways, all are great options. You can even make your own pudding if you'd care to.) Nilla Wafers (please please please please grab the Name Brand Nilla wafers and not the Walmart Great Value brand. Nothing against Great Value or any off brand labels but NIlla Wafers are not the same as "Vanilla Flavored Wafer Cookies")
