Raspberry Chipotle Salmon

This is a dish I made for a contest my school was holding. We had to use a Raspberry Chipotle sauce from Fischer and Weiser. I made Top 10 finalists with this dish! I served it with asparagus and mashed potatoes and I'll give the recipe/ingredients for that too. Raspberry Chipotle Glazed Grilled Salmon Ingredients: Salmon filets (however many you require) a bundle of asparagus (or two) potatoes (for mashing) Fischer and Weiser Raspberry Chipotle sauce 3 cloves garlic-chopped or g lemon-zested and juiced 1 C any kind of fruity wine (I used Arbor Mist Mango and Strawberry) 3 TBSP butter (plus more for your potatoes) green onions or chives cream or milk  2 TBSP vegetable oil salt and pepper to taste Directions:   (These steps aren't necessarily in order. You'll want to reorder them because you don't want one side being colder than the rest. Time management and all.) Starting with the potatoes you're going to want to peel them and wash t

Garlic Butter Tuscan Shrimp

Yoooo! So, this is one of THE most amazing dishes I have ever made. I LOVE Italian food and I made this with my garlic knot recipe which you can find located somewhere among my blog. This was also the first time I cooked with wine and yeah...I ended up just drinking the rest of the bottle. It was dry and terrible but it has alcohol so who cares. Anyways... Creamy Garlic Butter Tuscan Shrimp Pasta Ingredients: 2 TBSP unsalted butter 6 cloves garlic, finely diced (or grated... grated is quicker and less sticky. Anyone else uncomfortable with how sticky garlic is? No.. Just me? That's cool...Whatever) 1 LB shrimp (or prawns if you're into that sort of thing) tails on or off  1 small yellow onion, diced  1/2 C white wine, optional (cooking wines are salty as all get out so I recommend just a white Pinot or something along the lines) 5 oz jarred sun dried tomatoes in strips in oil, drained. Reserve 1 tsp of oil. (these are also hell salty so yeah... maybe don

Grasshopper Ice Cream Pie

I know you read the title and let me go ahead and inform you it DOES NOT contain actual grasshoppers. Sorry to disappoint...I know I was kind of let down. Whatever the case, actual grasshoppers or not, it is a incredibly easy and super amazing 4 ingredient dessert. Grasshopper Pie Ingredients: Mint Ice Cream (if you aren't in Texas and don't have Blue Bell I'm sorry but whatever you do have will have to work) 8 oz Whipped Cream  Mint Oreo's (something I had never tried until I made this and they are great!) Hot fudge sauce or chocolate shell (I used the chocolate shell and it was INCREDIBLE)  Oreo Crust  Directions: Put your ice cream into your shell. (You're going to want to soften it and use a warm metal spoon or rubber spatula to spread it around the shell evenly) Top with a layer of mint Oreo's  Cover with whipped cream Sprinkle crushed mint Oreo's over the top. Drizzle with either hot fudge or chocolate shell. Seri

Shakshuka

What I know about Shashuka I learned from my boyfriend...and he learned from his sister in law. The extent of MY knowledge is that it's something she makes for breakfast and it's amazing...and let me tell you. It. Is. AMAZING. This isn't exactly a "traditional" Shakshuka but what even IS traditional these days. Ya know? SHAKSHUKA Ingredients: 2 Tbsp olive oil 1 large onion (otherwise known as a "tear root) 4 garlic cloves  2 28 oz cans diced tomatos 1 can of Rotel with Green Chiles 1 Tbsp paprika 2 tsp cumin 1 link (?) Chorizo (Mexican grease link...) salt and pepper to taste 6-8 eggs (unfertilized... preferably) 2-4 oz feta cheese (we used tomato and basil feta) 2 Tbsp chopped fresh parsley pita or fresh bread  for  serving Directions:  Preheat oven  to  375 degrees Add oil and onion to pan. Cook for about 5 Minutes or until they're soft. Add garlic and cook for another 1 minute.  Remove chorizo from casing

Garlic Knots

I LOVE making bread. Any and all kinds of breads. I started making breads the artisan way before using a stand mixer because A: I didn't have stand mixer and 2: I just wanted to be able to say that I can make bread from scratch by hand. So without further adieu... Garlic Knots Ingredients: garlic- about like maybe 3 cloves...? (vampire repellent) parsley (amateur chefs go to garnish) 1 1/2 tsp garlic salt (or just garlic powder and salt) 1 1/2 tsp sugar 1 stick of butter 1 1/2 C water (warm or hot. As long as it's not cold. The heat helps the yeast to activate) 1 pkg yeast  3 3/4 C bread flour 2 tsp salt 2 2/3 tbsp Olive Oil 1/4 C grated Parmesan cheese Directions: Add flour, sugar, yeast, and salt. Mix. Add warm water and 2 tbsp of olive oil. Beat until dough forms ball. Kneed. Grease a large bowl with remaining olive oil. Place dough in bowl and cover. Let rise for 90 min or until doubled. (Or however long. Technically it is possibly to over

Banana Pudding

Just so you're aware before you get into this and then you're like "Wait...whaaaa-?" This is NOT  your momma's banana pudding recipe. Unless it is. All I know for sure about momma's and banana pudding is that this ISN'T my momma's recipe but she DOES love it.  Banana Pudding Ingredients: milk (good ol' certified cow calcium) (1) 3.4 oz box Banana Pudding mix (Instant or heat and serve. I used heat and serve without reading the box and needless to say it took me two tries to get it right. I also grabbed Banana CREAM pudding instead of regular banana... I don't pay a lot of attention to things. Anyways, all are great options. You can even make your own pudding if you'd care to.) Nilla Wafers (please please please please grab the Name Brand Nilla wafers and not the Walmart Great Value brand. Nothing against Great Value or any off brand labels but NIlla Wafers are not the same as "Vanilla Flavored Wafer Cookies")
